Kylynn's Chicken Salad Recipe

Perfect for beach snacking.

# Ingredients

  • 2 chicken breasts
  • 3 eggs
  • 1/2 - 1 cup mayonnaise
  • 1/2 - 1 cup sweet relish
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 tbsp sugar

# Directions

  1. Cook chicken breasts in instant pot on high pressure with 1 cup water (if you don’t have an instant pot, boil them instead). Once cooked, move them to kitchen mixer and mix until slightly shredded
  2. Boil eggs. Once boiled, peel them, then dice to desired size
  3. Add diced boiled eggs, mayonnaise, sweet relish, salt, pepper, and sugar to kitchen mixer. Mix them all together to desired consistency

  • 6 oz chicken breasts:
    • 6 mins on high pressure for fresh
    • 10 mins on high pressure for frozen
  • 8 oz chicken breasts
    • 7 mins on high pressure for fresh
    • 11 mins on high pressure for frozen
  • 10 oz chicken breasts
    • 8 mins on high pressure for fresh
    • 12 mins on high pressure for frozen
