Creamy Chicken Taco Soup Recipe

  • Chicken breast x2
  • 32 oz carton chicken broth
  • 15 oz can black beans x2
  • 15 oz can corn x2
  • 10 oz can rotel tomatoes x2
  • 8 oz block cream cheese x2
  • Ranch dressing package x2
  • 2 tsp cumin
  • 2 tsp garlic or onion powder
  • 2 tbsp chili powder


  1. Drain and rinse black beans
  2. Place chicken at bottom of crock pot. Pour black beans, corn (undrained), and rotel on top of chicken
  3. Top with all seasonings and mix together
  4. Dice cream cheese blocks then place on top
  5. Pour chicken broth on top
  6. Cover with lid. Cook for 8 hrs on medium
  7. Once cooked, take chicken out and shred it. Put it back in and mix together
