Camellia's Famous New Orleans-Style Red Beans Recipe

  • 1 lb. Camellia Red Kidney Beans
  • 1 lb. smoked sausage, sliced
  • 0.5 cup green bell pepper, chopped
  • 1 medium onion, chopped
  • 0.5 cup celery, chopped
  • 1 clove garlic, chopped
  • 0.25 stick butter (optional)
  • 8-10 cups water
  • 1 large bay leaf
  • 2 tbsp. parsley, chopped
  • Salt and pepper to taste
  • Cajun seasoning to taste


  1. Rinse and sort beans
  2. In a large heavy pot, cook sausage for 5 minutes
  3. Add vegetables and garlic to sausage, along with butter, and continue to cook until onions turn soft and clear
  4. Add beans, water, and bay leaf
  5. Bring to boil for 10 minutes
  6. Reduce heat, cover and simmer for 1 to 1.5 hours, stirring occasionally, until beans are desired tenderness
  7. Add parsley, salt, pepper, and Cajun seasoning
  8. Add more water while cooking, if necessary
  9. For creamier consistency, press some beans into the side of the pot with a spoon and stir
  10. Serve over hot cooked rice
  11. Serves 6 to 8 people


We usually make these in a crockpot: After browning the sausage, throw everything into a crockpot and cook on low for 8 hours.
