Camellia's Famous New Orleans-Style Red Beans Recipe

Ingredients #
- 1 lb. Camellia Red Kidney Beans
- 1 lb. smoked sausage, sliced
- 0.5 cup green bell pepper, chopped
- 1 medium onion, chopped
- 0.5 cup celery, chopped
- 1 clove garlic, chopped
- 0.25 stick butter (optional)
- 8-10 cups water
- 1 large bay leaf
- 2 tbsp. parsley, chopped
- Salt and pepper to taste
- Cajun seasoning to taste
Directions #
- Rinse and sort beans
- In a large heavy pot, cook sausage for 5 minutes
- Add vegetables and garlic to sausage, along with butter, and continue to cook until onions turn soft and clear
- Add beans, water, and bay leaf
- Bring to boil for 10 minutes
- Reduce heat, cover and simmer for 1 to 1.5 hours, stirring occasionally, until beans are desired tenderness
- Add parsley, salt, pepper, and Cajun seasoning
- Add more water while cooking, if necessary
- For creamier consistency, press some beans into the side of the pot with a spoon and stir
- Serve over hot cooked rice
- Serves 6 to 8 people

We usually make these in a crockpot: After browning the sausage, throw everything into a crockpot and cook on low for 8 hours.
